Bryce turned 29 on August 29th. This was his golden birthday. We celebrated by going out with our friends Dave & Dawn. We somehow ended up going out to eat at my favorite restaurant, don't know how that happened ;). It was a Japanese steakhouse, yummy. We then went home and had Rhonda's carrot cake with the girls. Bryce has had this cake every year for his birthday, and it is delicious! If you make it, I recommend making it the day before so the flavor really sets in. Happy birthday Bryce!
Carrot Cake-Rhonda Leavitt
2 c flour
2 tsp vanilla
1 tsp baking powder
1/2 c nuts
2 tsp baking soda
3/4 c raisins
3 tsp cinnamon
1 1/2 c grated carrots
1/2 tsp nutmeg
1 tsp salt
1 1/2 c oil
2 c sugar
4 eggs
Frosting:
1/2 c butter
1 8 oz cream cheese
1 box powdered sugar
2 tsp vanilla
1. Stir dry ingredients except sugar. Combine oil and sugar, add eggs one at a time.
2. Add dry ingredients to egg mix. Add vanilla, carrots, raisins, nuts. Combine and
pour into bundt pan.
3. Bake at 350 for 50-60 min. Remove and cool completely.
4. Beat butter and cream cheese together until light and fluffy, gradually add
powdered sugar and vanilla.
5. Frost cake and refrigerate.
